Hawaii Candy and Cookies' owner Karen Galan is a passionate and skilled
pastry chef with over 20 years of experience. She trained with
French pâtissier Patrice Berson in Honolulu. For 16 years,
she had the privilege of being mentored by Hawaii’s famous
and beloved pastry expert David Brown at the Hilton Waikoloa
on the Big Island, where she became known for her gingerbread
houses. Galan, who masters all things sweet—chocolates,
sugar works, mousses, and petits fours, plus a variety of cakes—is
also the owner and host of Hale
Apapane, a secluded vacation cottage minutes away from Hawaii
Volcanoes National Park that accommodates up to nine. Guests
at Hale Apapane receive a sample plate of fine pastries upon
